We cannot imagine FOC PIM PAM without Kok Wai. Together with Ronald, they are training and teaching our team on how to give you the best Spanish gastro-bodega experience. Knowledgeable about different modes of service due to his vast F&B experience (The Chamber, Hard Rock Cafe and his own bar for over 13 years!), with the best smile and positive attitude, he sets example for the service crew and motivates them every day to do better and better!

 

RONALD -  ASST RESTAURANT MANAGER & HEAD SOMELIER

 

His life-long passion and commitment to F&B, is what makes Ronald unique. Trained at Le Cordon Bleu, experienced customer service professions, also in Spanish dining (Catalunya Restaurant), leads our FOC PIM PAM Service team to excellence. He will be the one to ask about the wines, when you don’t know what to choose from our extensive Wine Bodega. Our gem and hidden weapon!

 

CLAIRE YEO - HEAD OF GUEST RELATIONS

The first person that you see smiling when you come to FOC PIM PAM! Having worked with Catalunya Restaurant, Butter Factory and at FOC Restaurant at Hong Kong Street, over the years she has gained vast experience in Guest Relations. Right now she is here with us making sure your reservations and special requests are perfectly taken care of!

JUANJO MARI PARDO - HEAD CHEF

 

Dedicated Chef with a life-long professional experience. Born in¬¬¬ Valencia, started his career as early as during his teenage years: helping his family in their restaurant business in Requena. Inspired by his family of restaurateurs, Chef Juan Jose spent over four years learning his skills at Valencia and Castellon F&B Schools. Upon finishing his professional education, he travelled to London (PIX Pintxos) and Brussels (Marriott Hotel) to hone his culinary skills. After a few years of learning and travelling he went back to Spain, this time to the sandy beaches of Formentera to work at Hotel Riu, Es Cupina. These were busy years filled with different events and collaborations as well, including ATP Tennis tournaments and other collaborations with Paco Morales (Michelin Star Chef, Noor Restaurant).

 

MARC MAÑOSA CONTANTÍ - SOUS CHEF

Our new Head Chef is coming straight from Spain. He has been working in the finest Restaurant establishments, gathering his experience and polishing his skills with the best: Mugaritz (2 Michelin stars), Nerua (1 Michelin Star), Coure Barcelona and famed Ca La Nuri Platja, to name the few. This young Chef has also been recognized for his creativity in various national culinary competitions and branded trainings. So lucky to have him to guide and inspire our team!
