Chef Javier Vicente


Chef Javier’s culinary career began early, inspired by his Valencian tradition and respect for the Spanish cuisine. He first started learning about the art of crafting different types of Paella from the Head Chef of Hotel Meliá Boutique Inglés, Roberto Segrelles.

His culinary skills truly flourished when he moved to work for Hilton Hotels, first in Zurich (Switzerland), then in Valencia; finally moving to Hilton Tower Bridge in London, where he combined his traditions with newly acquired multi-cultural knowledge. In 2011, he started at Rules Restaurant (the oldest restaurant in London!), working and learning under the tutelage of Chef David Stafford. He thrived in cooking traditional British cuisine and finally became his Senior Chef De Partie. In 2014, Chef Javier started a new challenge at the recently opened Ibérica Restaurant by Michelin-Star Chef Nacho Manzano. He even cooked Paella for the British Royal Family at the Royal Automobile Club at Epsom Horse Racings (twice!). He then set up The Little Taperia in South-West London in 2015 which was awarded “The Best Restaurant in South West London” by TimeOut. He soon moved on to establish London Paella School and taught hundreds of people to cook one of his favourite Spanish dishes.

After seven years in London, having travelled a large part of the world, he kept looking for more exciting challenges. Chef Javier came to Singapore to work as Head Chef of FOC Restaurant and now, at FOC PIM PAM. If he is not cooking, you will definitely find him reading about different cuisines and experimenting with new recipes. He has been part of the Culinary Team at Madrid Fusión for years now, together with Chef Sergio Pérez, managing the teams of one of the most important gastronomic summits; so he keeps up with the most recent culinary trends and techniques.
